Stuffed Shells

These were really good, I ate way too many! These freeze really well, so you can double the recipe, and put half in the freezer for another night. Ingredients:
1/2 package Jumbo Pasta Shells
1 egg, beaten
15 oz. container of ricotta cheese
1/2 pound mozzarella cheese, divided
1/4 pound parmesan cheese, grated and divided
1 1/2 tsp. dried parsley
1/2 tsp. salt
1/2 tsp. black pepper
1 jar pasta sauce

Directions:
-Preheat oven to 350*
-Bring a large pot of salted water to a boil, add pasta and cook for 8-10 minutes. Drain
-In a bowl, mix eggs ricotta, half the mozzarella, half the parmesan, parsley, salt and pepper until well combined
-Stuff the cooked shells with ricotta mixture and place in a 9x13 greased pan
-In another bowl, stir together pasta sauce and cheeses, pour over stuffed shells
-Cover with foil and cook for 30 minutes
-Remove foil and cook for an additional 15-20 minutes, until edges are bubbly and shells are cooked.

that looks like a really good idea. i'm thinking it might be just the thing to help me use up the rest of my feta cheese.
