Penne Pasta with Pesto

This is a favorite at our house. It's really good if you add cooked chicken that has been diced, or you can also serve it with shrimp that has been cooked with garlic and lemon juice.

Ingredients:
1 box penne pasta
1/2 cup prepared pesto (I use a pkg. of pesto sauce that you make quickly over the stove)
3 TBSP parmesan cheese
3/4 cup shredded mozzarella cheese
1/4 cup mild cheddar cheese, shredded
1 (8 oz.) can V8 juice (you can use spaghetti sauce instead of the V8)
salt and pepper to taste

Directions:
-Preheat oven to 350*
-Cook pasta in boiling water for about 10 minutes; drain the pasta, but do not rinse
-Add the pesto, salt, pepper, and cheddar cheese to the pasta
-Stir and pour into a 9x13 baking dish
-Sprinkle the top with mozzarella and parmesan cheese
-Pour the V8 over the pasta and bake for 15-20 minutes or until cheese is bubbly

*TIP*
-If you use spaghetti sauce instead of the V8, mix the sauce in with the pesto, salt, pepper, and cheddar cheese before adding it to the baking dish.
