Cafe Rio anyone?

My sister in law e-mailed me a few Cafe Rio recipes and we tried two of them the other night. I was very surprised at how easy the recipes were, but so good at the same time. My husband said it didn't taste exactly like Cafe Rio, but said it was still really good. We made ours into burritos with the beans and the pork inside, we poured some green enchilada sauce over the top, added some cheese and broiled it in the oven for a few minutes. Cafe Rio Sweet Pork

Ingredients:
1 cup salsa
1 cup brown sugar
1 cup Dr. Pepper
2 lb. pork tenderloin

Directions:
-Mix salsa, brown sugar, and Dr.Pepper together and pour 2/3 mixture over pork.
-Cook in crockpot on low about 8 hours
-1 hour before serving, shred pork in crockpot, add remaining salsa mixture, cover and let simmer till ready to serve.


Cafe Rio Black Beans

Ingredients:
1 can black beans, drained and rinsed
1 1/3 cup tomato juice
2 cloves garlic, minced
1 tsp. ground cumin
2 TBSP. olive oil
1 1/2 tsp. salt
2 TBSP. fresh cilantro, chopped

Directions:
-In a pan cook garlic and cumin in the olive oil over medium heat until you can smell it.
-Add beans, tomato juice and salt.
-Continually stir until heated through. Just before serving stir in cilantro.
