Twice baked potatoes

Anyone that knows me, knows that I LOVE potatoes. Any kind, served anyway. These are especially one of my favorites. Enjoy! Ingredients:
2 large baking potatoes
olive oil
1/2 cup grated cheddar cheese
1/4 cup sour cream
2 tablespoons butter
salt and pepper

Directions:
-Preheat oven to 400*
-Rub olive oil on the potaoes, then pierce several times with a fork
-Place directly on the oven rack and bake for 45-60 minutes or until done.
-Once potatoes are done and have cooled enough to handle, split each one in half.
-With a spoon, scoop out the inside and place in a large bowl.
-Combine with butter, sour cream, and salt and pepper using a mixer or potatoe masher. *You can add a little bit of milk to make it creamier if needed.
-Spoon mixture back into potatoes and place on a baking sheet
-Sprinkle with cheddar cheese and bake for 5-10 minutes or untill mixture is warmed.
